Frying Pan Calzone Pizza

Pizza in the Wild

A quick and easy meal for a day trip or weekend away – there’s nothing quite like a tasty pizza when you’re out in the wilds!

Ingredients

Serves 2
• 1 packet white bread mix
• 1 tbsp pesto or tomato puree
• 125g mozzarella
• 6 sundried tomatoes (chopped)
• 1 tbsp sunflower oil
• Any toppings, eg: cooked ham, chorizo, chicken chunks, pitted olives, cooked sausages
• Salad leaves

Steps

• Make the bread dough, knead well and leave somewhere warm for 2 hours.
• On a chopping board, divide the dough into 2.
• Roll or press out the dough in a circle the same size as the frying pan base.
• Spread half with pesto or tomato puree, then add cheese, sundried tomatoes and any other toppings. Leave a 2cm border around the edge.
• Fold the plain half over and seal like a Cornish pasty by pressing the edges together with a fork.
• Repeat for the other Calzone pizza.
• Heat half the oil in a heavy-bottomed pan on your camper’s hob.
• Put the Calzone’s into the frying pan and cook on a low heat for 10 minutes.
• Turn the pizzas and continue cooking until golden.
• Serve with a side salad.
